Make a concentrate. From Turkish tea to the Russian samovar to the 1970s "sun tea" to institutional iced-tea preparations to the present-day chai concentrates, making an essence and then diluting it to taste is a practical method for brewing tea. This concentrate can be prepared using either hot or cold water.

What better way to finish off a fabulous meal than with freshly brewed sweet tea! (1) Place 6 orange pekoe tea bags (Lipton or Luzianne) and 1/8 teaspoon baking soda in a 1-quart measuring cup. Pour 2 cups boiling water over the tea bags. Cover and steep for 15 minutes. (2) Remove the tea bags; do not squeeze. Pour the tea into a 2-quart pitcher. (3) Stir in 1 1/2 cups sugar until completely dissolved. Add 6 cups cold water. Refrigerate until chilled. Serve over ice, garnished with mint leaves and lemon wedges.

I dont know about "iced tea" I make a cold tea by making lots of hot tea (very strong) diluting with water until its to your liking, let it cool then put it in the fridge to drink cold whenever you want a cold pick me up.

Now, I know it's probably not "Southern Sweet Tea," which I am still devoted to...

But adding the juice one or two lemon halves really makes a nice difference.
