I've tried to make zucchini fritters in the past and they didn't turn out very well at all. I could try again though, I suppose...I do love fritters.
The responses you'd get would vary dramtically based on the forum that you posted in. Zucchini bread sounds like it would be good. Whatever you make, I think it should be cooked, and in a way that doesn't leave it soggy.
Did you get all the excess liquid out when you made them? You have to really squeeze all the liquid out of your grated zucchini for fritters or they won't hold up very well.
I enjoy Zucchini or any squash: Cut length wise, thinly slice halves, add to the sauteing garlic in frying pan (medium heat, no burnt garlic) add salt, cook till see through and soft, enjoy as a side or add rice noodles to mixture as a main. The only way my son will eat them lol

Whenever i have zucchini, i cook it with a big juicy steak, then dont eat the zucchini cos it tastes like lawn So basically just steak
