It depends. If I'm making Indian food I follow a recipe pretty close. I like my food spicy so I might add a shake of cayenne or a diced scotch bonnet. Thai and Korean I can make up as I go, I spent enough time there to know what to add and what not. Chinese is easy, I logged many hours with a bong and Martin Yan, surprised I can remember it at all. Northern Italian is cut and dry, though my ragout varies based on available ingredients. Southern Italian is seasonal here on the Chesapeake, mostly summer. Everything is based on what I can get. If I have venison and tomatoes and peppers, I make chili. If I have chicken breast and asparagus I make Panang. Etc. I don't like much American food and fuck the French in the ass with a broken bottle of beaujolais.
