When I lived with a few friends in Dallas, it was just the opposite. Sometimes when we lit the fireplace, we'd go get some big steaks, one big wooden plate, the iron off the outside grill and steak knives... no individual plates, no forks, nothing. We'd heat them to just above body temperature, take them off the fire and just cut off big chunks and eat them with our hands. Almost all the women loved it, but none of the men took part.
actually, i find the exact opposite to be true. i don't know any women who eat their steaks any more done than medium rare. men, i find, have an aversion to eating blood.
Ive had a few people order it butterflied..... butterfly cut is pretty much taking the filet, and cutting it almost in half, and folding the meat open so that it is thinner. it makes the filet cook alot faster though, especially a well done filet. I think people are stupid for destroying such an expensive cut of meat..... those should be eaten medium rare to medium........ the filet should also be thick, so you have a huge pink area of meat....... yumm. some people do not know what they are doing! I also am amused with people who order a prime rib well done..... that just kills me! wow, they dont know how good that medium rare cut of prime rib is.
i didnt know that you were ALLOWED to order prime rib well at most places. in any case, that is just silly.
the law, here in kansas, states that all steaks ordered from a restaurant must be cooked at least 10 seconds on each side. Ive seen a person order a porter house, and they wanted it raw. they didnt even want it to touch the grill. when we brought it out to him, we said "were not responsible for this, you know this is dangerous, and we have witnesses that saw you order it that way, and us warning you..... so we cant be held liable for you getting sick...." he ate it, and he totally loved it. and Ive also seen the other extreme with people ordering steaks extra well done. they want it charred as all hell........ ugh, nasty! its like eating charcoal. I even got a tip from a guy because he didnt even have to bring it back for me to cook it more. I made it just the way he wanted it. it was nasty though.
we dont always cook prime rib, just on special occassions, mosty. we cook the prime rib to medium rare, and hold it at that..... usually the end pieces are more medium well to well..... so those are used for people that want it that way..... sometimes I have to throw the prime rib in some boiling auju just to make it well done... I think people are dumb!
