Sounds counter-intuitive to most. But I actually like it. I never warmed up to cold soup (no pun intended). Oddly enough, with the exception of bean soups, I can't think of a whole lot of vegetarian soups. You can cream just about any vegetable (as noted by Campbell's). My two major go-to vegetable soups are either lentil or mushroom and barley. Borscht is another good choice (beet and cabbage soup). Any other suggestions or favorites?
Gazpacho is really good....almost like a soupy salsa. Other cold soups just don't do it for me. Black bean, lentil, pasta fagioli are good veggie soups. Not a lot of thin stock soups I can think of but try making french onion with vegetable stock. How about miso?
