I would've really liked to have seen her in the original series with the Lightning Lord guy and his crew.

 

I'd prefer a do-over of the show season finale. That was so disappointing!

 

I don't think it was much the ending that was the issue (others may disagree with the outcome) but more how quickly it was done.
GoT was epic because of the dots(/easter eggs) that were there throughout the series that came back in latter episodes to explain things ((albeit there were some loopholes)).
The Final series was too rushed - no long lead ups to the conclusion, no prolonged battles with the Night King, the final fall of the Capital, the dishonour of an honourable Greyworm (more annoyed than tortured soul), the New Grey council a watered down version rather than the strong cabinet it once was ....and -as you say- disappointing
- So many stories than could be told - both in past and future tale (hence this thread)

 

In addition, I think the the age of the cast was such that there was a time limitation on depicting the characters.
Jjust as with the 'Back to the future' - MJ Fox was hardly a youth in the first film - so for continuity 2+3 were made together lest the age difference showed up more - even for a youthful a face that he had.
'Little' Ayra was growing up, Sansa was maturing from a girl to a woman, along with other actor/actressses also aging - and some (sadly) passing over - ((As well as other professional commitments - let us not forget the cast have other projects to consider))
There clamour for Martin to 'hurry on and get on with it" must have been a personal strain - AND at least it was completed before COVID kicked in ! = and there was an ending
