id have smelled it if it smelled ok id go ahead and slow cook it ... if it didnt id trim off the bad parts and turn that roast into a jerky batch
Spiff's right. If it smells okay, cooking above 145 F (internal meat temperature) will kill most bacteria, but it can take a long time. If you slow cook in the crock pot, and check the temperature when it comes out. You should aim for about 160-165 with a pot roast anyway.

The only way to tell is to smell it. We did not have the luxury of a fridge in my younger days and my late mother used her nose to determine what needed to be consumed that day before it went rancid.
