I've already made a chilli this week, and ribs last week. What are some of your favorite crock pot recipes? I want to cook something up in my crock pot today but am stumped as to what to make.... Ideas please!
I often make Chicken Cacciatore in my crock pot. I only use breast in it as I do not care for dark meat or boned chicken. Works great if you leave the chunks larger as it then does not dry out. Get home throw a little spagehettini on to cook and dinner is done.
I love crock pot chicken! In the past, I've pulled the chicken and used it in baked burritos or on pizza. So delicious!
If you get a pork butt or shoulder you can make a simple rub for it and drop it in the slow cooker for the day with a bit of onion and some water or broth. You will have perfect pulled pork that you can mix with your favourite barbecue sauce!
If I had to crock pot something right now, I would make baked beans from scratch with lots of molasses....and bacon bits....sorry, pigs...........jalapeno peppers in the mix and covered with cheddar cheese....... The chicken dish does sound good, too....
I also make "whatever is in my fridge" stew a lot! Veggies cubed up fairly large, potatoes, onions and carrots (those are always lying around somewhere in my house) whatever meat you have cubed up, water or broth, whatever herbs you like. It's pretty hard to mess it up regardless of what you put in lol.
I use my crock pot quite often. One of my favorite things to make is (I don't have a name for the dish) lay 4 boneless chicken breasts in the crockpot, slice swiss cheese and cover the top of the chicken with it, mix 3 cups of chicken broth with 1 can of cream of mushroom and 1 can of cream of broccoli soup, and pour that in the crockpot. Cover with 2 boxes of stovetop stuffing, then drizzle melted butter on top. Eat, enjoy and gain 5 pounds, but it's worth it.
pot roast with beans and potatoes. i don't have the slightest clue how to cook it, but it's one of the best things my mom used to make.

Lentil soup and pea soup are a couple of my faves to make in the crock. Also Japanese onion soup. It makes a delicious clear broth to throw scallions, mushrooms and/or noodles in later. So good. I made bone broth and veggie broth recently too. Been trying to incorporate more broth into my diet as it helps curb my appetite. I also have roasted a couple chickens in there before, but not crazy about the texture compared to oven-roasted. The chicken/stuffing/green bean concoction must be universal because I love love love doing that. I got it from a friend who claimed she invented it, lol. LIES.
I make a mean beef, barley and vegetable soup in my slow cooker. I tried a new recipe for gumbo recently. It was pretty awesome sauce.
A made a red pepper and tomato pasta sauce in the crock pot today. I just chopped up the tomatoes and peppers with some on on and garlic and threw it all I the crock pot with a tin of crushed tomatoes. I only seasoned it with some oregano salt and pepper. It was yummy!
I just made cranberry apple sauce overnight last night. 12 really ripe cortland apples, a bag of fresh cranberries, a cup of honeycrisp apple cider, a teaspoon of apple pie spice, a half teaspoon of ground dried orange peel, and 2 tablespoons brown sugar (which I stirred in last to taste). I threw it in last night and let it simmer 10 hours, then stirred it in the morning and it all fell apart. It's heavenly.
couple of simple ones I make often 1) Take a ham, cut into large chunks, put in a pot of water and bring to a slow boil, then pour off the water. This is to get rid of some of the brine/salt. Then put the ham and some large potatoes that have been quartered in the crock pot and slow cook for a couple hours until the potatoes are almost done. then take some whole cabbage and cut into large pieces that will fit in the crock pot and then cook for another 15-30 minutes, depending on your personal preference on how cooked you like the cabbage. Simple peasant food, but damn it is delicious! 2) simple roast beast; take a cut of beef, I have used pot roast and thick london broil with good success. brown the meat good on all sides and then put in crock pot. The rest is simple, potatoes, carrots, onions, celery, cut up and thrown in, maybe a dash of liquid smoke, seasoning, Worcestershire sauce etc. If you have it on hand, some browning sauce is also good to coat the meat with. Put on low and walk away for 6 hours and then gorge yourself! mattekat already beat me to my #3 fav, pulled pork. MMMM,MMMM Good! I do have a pork roast in the fridge ready to go, Hmmmmm, pulled pork or do I go with my pork with apple & onion concoction? I'll have to pay attention next time I make the apple & onion pork and maybe share a recipe for it, but I usually just wing it.......
