i dont like roasted red meat that much, i like drumsticks and other varieties of the dark parts of white meat

 

well I'm roasting the roast because it's super fatty and the brothing of it failed to render 98% of the fat, so now I'm trying to draw out the fat so I can use it for gravies and sauces and things or alternativly more broth,


I think I'm going to turn the roast into tamale meat when it's done, I'll need to get masa tomorrow and I think corn husks but otherwise I'm good to go on that....

 

oo...partially cooking strips of meat in the oven [afr marinating them in liquid smoke and other stuff] is a great cheap way to make cheap jerky

 

yeah, I make jerky too, I'm thinking of doing that with some "sandwich steaks" tomorrow, more worschtorshire, teriyaki, lemon pepper sorta thing on my end though, maybe some brown sugar but that's a whole different mood of jerky...
