Do your pancakes ever crunch

    I've been experimenting with different recipes, but no matter what i do, the pancakes form a crust that crunches. I'm not saying that that's a bad thing, mind you, but it does seem a might bit different.

    I cook them on cast iron. Works good! :)

    I only cook mine on cast iron. And the pan is always preheated. I use both oil and butter.

    waffles, made from nearly the same batter, are supposed to, sort of mildly 'crunch'.

    i'm not sure how you'd get a pancake to do so though.
    at least at the moment, not having yet thought this entirely through.

    if i had a real kitchen in which to work, places and ways to store dry ingredients that won't attract bugs and so forth,
    i'd be very interested in some of the op's recipes.

    Easy Pancakes Recipe I just take this recipe and add a cup of the sourdough that I've been making for ages (flour and water only).

    Yeast-raised pancakes are my favorites. Start the batter the night before and let it ferment in the fridge. Light and airy with that yeast flavor. 275 F degree griddle, lightly buttered, flip when center bubbles and edge curls. Butter and real maple syrup. Yum!

    Sounds like the pan is too hot, and the batter is too thin..

    But your pancakes and mine might be different..

    i'm fairly sure i've never made a pancake myself. i'm also fairly sure i've never eaten a crunchy pancake.

    As MeAgain said, your pan is too hot.

    Try a different pan, or bake them in the oven?

    "Whisk together all ingredients, and let sit at least 15 minutes. Grease a nonstick skillet (or two skillets if you have more than one) very well, and preheat the oven to 350 F. Drop ladles of batter onto the skillet or skillets, place on the oven center rack, and immediately turn the heat down to 280 F. Bake 8-12 minutes, or until tops of the pancakes are no longer wet and pancakes can be easily removed with a spatula. There is no need to flip them! Re-grease the skillet, and repeat the baking step with remaining pancake batter. Pancakes can be frozen for a later date if desired."

    If you decide to go and cook today
    Canola oil by your baking tray
    It comes in a yellow spray can
    It makes things not stick to pans

    I like my pancakes nice and crisp. More around the edges. Hence i prefer to make them thinner than thicker.

    Could be the pan is too hot, or your batter is too dry, or both.
