Deep Fried Camembert In Beer Batter With Redcurrant Sauce

    Ingredients

    2 x 125 Gram Packets Of Good Quality Camembert Cheese

    For The Batter-

    1 Cup Self Raising Flour

    1 Cup Beer

    Canola Or Vegetable Oil For Frying

    Extra Flour For Coating

    For The Redcurrant Sauce

    60 Grams (2 oz) Frozen Raspberries

    1/2 Cup Redcurrant Jelly

    1/2 Cup Water

    1/2 Teaspoon each of grated orange and lemon rind

    1 Tablespoon Brandy

    Method

    Prepare the batter-sift the flour into a basin,make a well in the centre and gradually stir in the beer then beat till smooth ,allow to stand at room temperature for 1 hour,cut the camembert into quarters and roll in the extra flour,shake off any excess flour then dip in the batter and drain off any excess batter,cook in hot oil till golden brown,remove from oil and drain on paper towel,serve immediately with redcurrant sauce-

    Place the raspberries,redcurrant jelly ,water,orange and lemon rind and brandy in a small saucepan,bring to boil then reduce heat to a simmer and cook uncovered 15 minutes,strain and serve with the deep fried camembert.
