Ingredients
Apple Cider Glaze
• 4 cups apple cider
• 1 1/2 teaspoons freshly ground black pepper

Wonton Ravioli
• 16 oz Filling Mixture from Gluten Free Ravioli With Potato/Artichoke/Feta Filling Recipe
Ingredients: 1 tbsp olive oil, 1 tsp minced garlic, 1 (14oz) can artichoke hearts, 12 oz mashed potatoes (I used ready made), 4 oz crumbled feta cheese. (use about half if you make the whole mixture)
• 1/2 cup finely grated Asiago cheese
• 1 shallot, minced
• 2 cloves garlic, minced
• 2 tablespoons coarsely chopped fresh sage
• 1 teaspoon freshly ground black pepper
• 1 (1 pound/454 g) package round wonton wrappers (60 wonton wrappers)
• 1 egg, whisked for egg wash
• Apple Cider Glaze
• Salt
Directions
For the apple cider glaze:
Put the apple cider in a large saute pan over high heat. Once apple cider has reduced by 1/2 and has achieved thick syrup consistency, add the black pepper, stir, and set aside.
For the wonton ravioli:
In a tall-rimmed saute pan bring heavily salted water to a boil. Reduce the heat slightly to a gentle boil.
For the wonton filling:

Directions
In medium skillet, heat oil and sauté garlic and artichoke hearts for about 5 minutes.
In food processor, combine artichoke hearts, feta and mashed potatoes until well mixed

Put the potato/artichoke/feta mixture, Asiago cheese, minced shallot, minced garlic, sage, and black pepper, in a large bowl and mix well to incorporate.
To assemble the wonton ravioli:
Put a wonton wrapper on a clean dry working surface and brush the entire wrapper with egg wash. Keep the remaining wonton wrappers covered while working to prevent them from drying out.
Put 1 tablespoon filling mixture in the center of 30 wonton wrapper. To cover, gently stretch another wonton over top, connecting the edges of the wrappers, press to secure. Gently lift, cup hands over filling to release any air inside, pinch around the rim to secure and put on a dry tray. Repeat with remaining wontons.
To cook the wontons:
Gently put 5 wontons in the boiling water, turn over half way though cooking and remove, approximately 5 minutes.
To serve the wonton ravioli:
Put the wonton ravioli in a large bowl, drizzle with the apple cider glaze, put on a serving dish and garnish with chopped fresh chives.

Since my wife is mostly vegetarian, and I really thought Roger Mooking's Everyday Exotic™ recipe for wonton ravioli looked delicious, I naturally decided to combine my Gluten Free Ravioli Recipe with his.
I substituted his turkey/pork portion of the filling with my vegetarian friendly filling from the gluten free recipe I previously posted.
The disadvantage of my original ravioli recipe was that the made from scratch pasta was way more work then I feel like doing, usually. Using the wonton wrappers eleviates this issue. I was also thinking I wanted a less fatty sauce, and the apple cider glaze definitely looks delicious and fixes that desire. I haven't made this one yet, but it certainly looks awesome.
