Citrus Creme Caramels

    Ingredients

    1/2 Cup Caster Sugar

    1/2 Cup Water

    1/2 Cup Orange Juice

    2 Tablespoons Lemon Juice

    3 Whole Eggs

    3 Egg Yolks Extra

    1/3 Cup Caster Sugar Extra

    1/4 Cup Cream

    Method

    Combine the sugar and water in a saucepan,stir over medium heat till sugar dissolves then bring to the boil ,do not stir it again,boil rapidly for 4 minutes or till the syrup turns a light golden brown color,remove from heat immediately that it starts to color then divide the syrup evenly over the base of four lightly oiled heatproof dishes of about 1/2 cup capacity,set aside.

    Lightly beat the 3 whole eggs ,the extra egg yolks and the extra sugar,stir in the cream then the orange and lemon juice,strain the mix through a sieve and pour into the dishes,place the dishes in an ovenproof dish and add enough water to come halfway up the sides of the dishes.

    Cook in a moderate oven 25 ,minutes or till the mix is set,remove from water and set aside to cool then refrigerate .

    To serve dip the base of each dish in hot water then turn out on to serving dishes and serve with extra cream if desired.
