    Cheese Pancakes With Zucchini Sauce

    Ingredients

    Pancakes-

    3/4 Cup Plain Flour

    Pinch Salt

    3 Eggs

    2 Tablespoons Vegetable Oil

    3/4 Cup Milk

    2 Cups Fresh Breadcrumbs

    1 Egg Extra

    Vegetable Oil For Frying.

    Filling

    200 gms Button Mushrooms

    2 Tablespoons Pine Nuts

    185 gms (6 oz) Ricotta Cheese

    125 gms (4 oz) Mozzarella Cheese

    4 Tablespoons Grated Parmesan Cheese

    Zucchini Sauce

    15 gms (1/2 oz ) Butter

    3 Spring Onions

    185 gms (6 oz) Zucchini

    1 Cup Water

    Salt And Pepper.

    Method

    Prepare the filling-

    Put the pine nuts in a dry frying pan and cook over a low heat till golden,stirring them frequently to avoid burning,when they are golden remove from pan and set aside,next slice the mushrooms and add the ricotta,mozzarella and parmesan and the mushrooms and pine nuts to the pan and mix well.set aside.

    Next make the pancakes by sifting the flour and salt into a bowl,add the eggs and the oil and beat well till the mix is smooth and lump free,gradually add the milk and mix to a smooth batter,heat the pan and grease well,pour 2 to 3 tablespoons batter into the pan swirling so the mix covers the base with an even thin layer,cook over medium heat till golden then turn over and do the other side,repeat with remaining batter reserving 2 tablespoons batter for sealing the edges.

    Divide the filling evenly among the pancakes then spread the filling to cover half of each pancake,Brush the edges of each pancake with reserved batter,fold each pancake in half and brush the rounded edges with more of the reserved batter then fold in half again pressing the edges together to seal filling,brush with beaten egg and coat with the breadcrumbs.

    Deep fry in hot oil till golden and serve with sauce-

    Melt the butter in saucepan,add the chopped onion,cook 1 minute ,add the sliced zucchini and cook a further 3 minutes,stirring frequently,add water and bring to boil the reduce heat and simmer 15 minutes ,cool slightly and puree the mixture in a blender or mouli,return to saucepan and season with salt and pepper and bring to boil again stirring frequently,serve over the pancakes.
