1 cup Sugar 2 eggs 1 1/2 c flour 1 c grated carrot 1 tsp baking powder 1 tsp Baking Soda 1/2 tsp salt 1 tsp cinnamon 2/3 c oil 1 tsp vanilla 1/2 c drained crushed pineapple (Double recipe & use 1 small can) Beat eggs and sugar. Add remaining ingredients and beat well. Fill muffin cups 3/4 full. Bake at 350 degrees F or 180 degrees C for 25 minutes. Makes 12 muffins. Enjoy!!!
