beard all the way. i'm an all or nothing guy when it comes to facial hair; not a fan of mustaches, goatees, or sideburns on their own in most cases, but i do think a majority of guys look better with a full beard, or at minimum a full stubble.

incidentally, with the mustache and sideburns you look very much like a friend of mine from high school. except i can't imagine him wearing a cowboy hat. he's a history nerd, but i think he's more likely to show up in a busby than anything cowboy related.
