A Greek Vinaigrette.

    My father and I were experimenting with home cooking after my mother died. And we found this recipe in The Frugal Gourmet Cooks Three Ancient Cuisines. It was for a Greek salad. And it was delicious.

    You know the Greeks, when they cook, sometimes use Lemon juice in their vinaigrettes instead of a vinegar. It's a small substitution, but it makes a big difference.

    And always use fresh Lemon juice, never from a bottle.

    We have salad every day and I always try to use different salad dressings to change things up a bit. For me, lemon, olive oil and salt and pepper is a classic. It is a fav of ours on a basic salad with some shavings of parmesan on the top.
