Why Do My Figs Turn Black?

    I like getting dried figs, when I go to the store. Organic ones too, I might add (at least that's what it says on the label).

    I always use them by the save date. And, as they recommend, I put them in the refrigerator once I open them. But then they almost immediately turn black. And they taste funny too.

    What am I doing wrong? I have type 2 diabetes, and for a number of reasons, my doctor recommends I get fiber in my diet (figs are loaded with fiber, in case you didn't know). Why do they turn black?
