    Dinner is in the crock pot.

    I say "dinner" but there's no telling when it will be eaten; we're on a no clocks schedule with the granddaughters being gone for two weeks.

    I made sushi today. Since it's hard to get sushi grade fish here, I decided to use cooked seafood. I had saved salmon from a fillet I baked the day before and used that in a couple of the rolls, along with avocado, cucumber, green onions, asparagus, lettuce and mango. It was really good. Almost as good as the cooked shrimp I used last time. In one roll I omitted the salmon and added strawberries to the rest of the ingredients. In the last roll I used only avocado and cucumber, one of my favourite combos.

    I cooked the rice in the slow cooker, by the way. It was the first time I've made it that way. I looked up some info online and the consensus was to use 1-2/3 cups of water to one cup of dry rice. It came out perfect, no water left over and nice and fluffy. I used brown rice so it took 2-1/2 hours (for 2 cups of uncooked rice). White takes about 1-1/2 hours. It's so much easier than making it in a pot (where I've burned the rice too many times!).

    I'll have to jot that down somewhere about the rice. So far, I haven't done it in the crock pot.

    Here's more of a recipe with details. I'm so happy I tried it.

    I only stirred mine once. I made 2 cups (uncooked) and I made it in a smaller cooker, I think it's a 2-quart.

    [SIZE=16pt]Slow Cooker Rice[/SIZE]

    • 1-2/3 water to 1 cup rice (makes approx. 3 cups of cooked rice)
    • salt or seasonings (optional)

    1. Lightly oil slow cooker.
    2. Rinse rice a few times.
    3. Pour water* and salt or seasonings into slow cooker.
    4. Add rice and stir.
    5. Cover slow cooker and set the heat setting to high.
    6. Cook 1-1/2 to 2 hours for white rice, 2-1/2 to 3 hours for brown rice.
    7. Stir once or twice during cooking.
    8. Taste-test a spoonful of the rice and cook an additional 15 to 20 minutes, if necessary.

    *Broth can be substituted for water.

    I made chicken curry in the tajine today. With a wild rice mix I made in the crockpot. Easy and delicious dinner!

    bed of rice noodle topped with beef stir fry strips that i fried up with a bit extra veg oil then added mrs dash spice and honey garlic

    didnt have noney garlic sauce so i literally added minced garlic and pure honey to it

    it was good

    have to mix it in quick though before the rice noodles start sticking together

    I've had sandwiches today.

    Roast Beef with Spinach.

    Egg Salad with Spinach.

    Both on lightly toasted white bread with mayo and horseradish mustard.

    I didn't cook.

    We actually went out to eat which is extremely rare these days.

    Pork roast with gooseberries. I picked the gooseberries myself from the back yard. Nice and tart. I also made roasted red potatoes and roasted carrots, both nice and sweet. Good combo of flavours. savoury, sweet and tart.
