Pasta-Romaine Salad with Chicken and Feta

    1/4 cup dry white wine
    1/4 cup white vinegar
    1Tb. + 1tsp. olive oil
    1 teaspoon dried oregano
    1/4 teaspoon garlic powder
    2 tablespoons onion -- finely chopped
    1 tablespoon fresh parsley -- chopped
    1/8 teaspoon salt
    black pepper to taste
    4 cups fusilli noodles or any corkscrew noodle
    1 1/2 cups chicken breast -- chopped
    4 cups romaine lettuce -- torn
    2 Medium tomatoes -- seeded and chopped
    16 green olives -- quartered
    1/4 cup feta cheese -- crumbled
    2 tablespoons parmesan cheese



    In a large mixing bowl, combine wine, vinegar, olive oil, oregano, and garlic powder. Whisk together until well blended. Add onion, parsley, salt, pepper, noodles, and chicken. Toss to mix thoroughly. Cover and refrigerate at least 2 hours. At time of serving, add lettuce, tomatoes, olives, feta, and Parmesan. Toss well and serve immediately.

    I like to buy olives with thier pits in and pit them myself. I like to put avocado in mine too.
