Moldy Cheese In France.

    Is it true they keep cheese in France till it gets moldy? Then of course they cut the moldy part out. But I've heard them complain that we Americans throw away our cheese way too soon. But is that safe?

    Speaking of that, humans have been keeping cheese, butter and bread at room temperature for thousands of years. Of course you were an old man at 40 back then too. But what about those things? Butter and bread at room temperature? I know French bread or pain du jour has no preservatives and goes hard after a day. Now, milk turns in a couple of hours. But butter and cheese were made for room temperature, weren't they?

    Yes, they do eat the mold, they don't cut it out. Just like with Blue Cheese. Imagine trying to cut the mold out of that!
