I'm not Italian. I just eat it. Spaghetti and red gravy is high on my list of comfort foods. Imagine my surprise when I travelled to Costa Rica and saw that it was on the menu at many restaurants.
One of their secrets is that they create a sauté combination in a large skillet to which they add pasta water. The cooked pasta is then added to the skillet and is blended with the aforementioned sofrito.
Yumilicious!
