Hi I need some ideas for a vegetarian dinner. I havent eaten meat in a few days but im not really having dinners. The thing is I hate pastas and cheese so that cuts out a few options. Thanks for the help.
hey, i've been a veg head for a while now. i mostly eat the same things i've always had. tonight i'll probably have steamed white rice and steamed broccoli. you could eat that. or maybe a salad or spinach(you know the ones from a can, all you do is heat them) or a pb and j sandwich. i hope you get some ideas for dinner it's not good that you're not eating dinner. if these foods dont go with you i have tons of food options for you!

You can make nearly any meal vegetarian, just get creative.. I love to make stir-fries, with tofu or without.. any pasta can be made vegetarian, bean dishes, big salads with mixed greens and fruit, a huge baked potato loaded with mixed steamed veggies and a little margarine... for mexican food you can sub beans into almost any meat dish.. tacos, burritos, quesadillas, enchiladas.. look online, there are so many awesome recipes out there.
So before you went veg you only ate pasta and cheese and meat? There are thousands of veg dishes! Get looking for websites. I wouldnt even know where to begin recommending stuff, the lists so huge
This 1 is sorta quick & easy~I guess u can leave the cheese off or just not use as much. TORTILLA CASSEROLE One 16-ounce can pinto, pink, or black beans, drained and rinsed One 16--ounce can crushed tomatoes One 4-ounce can chopped mild green chilies 2 cups frozen corn kernels, thawed 2 scallions, minced 1/2 teaspoon ground cumin 1/2 teaspoon dried oregano 8 corn tortillas 1 1/2 cups grated nondairy Monterey Jack, cheddar, or jalapeno cheese Salsa for topping Preheat the oven to 400 degrees. Combine the first 7 ingredients in a mixing bowl. Mix thoroughly. Lightly oil a wide, 2-quart casserole dish and layer as follows: 4 tortillas, overlapping one another; half of the bean mixture; half of the cheese. Repeat the layers. Bake the casserole for 12 to 15 minutes, or until the cheese is bubbly. Let stand for a minute or two, then cut into squares to serve. Pass around salsa to top each serving
try stuffing bell peppers with rice, spices, and other veggies (maybe even some beans/chickpeas)...then put it all in the oven for a bit to heat up and enjoy! so yummy!
stuffed peppers get some or all of the following white or Spanish rice, seasonings, corn, beans, onions, salsa, veggie ground (like ground beef but veggie). my mom does breadcrumbs, pasta sauce and spanish rice. There are many more things I add and many you can add too. and make some stuffed peppers, 2 fill you up, sometimes even 1. it does take an hour give or take. 5-10 minutes prep and 40-50 minutes baking at 350 but is worth it!
also, ratatouille What you need is eggplant, zucchini, red, yellow and orange bell pepper, onions and bella mushrooms. At least that is my mix. Sometimes I even add a 4th pepper, a green bell pepper. put in pot with 1.5 cups water, steam for 45 minutes and you've got yourself a damn good meal. veggie burito wrap, refried beans and/or black beans, salsa, onions, tofu or veggie ground optional: halbernero pepper, rice. to make rice more interesting, put some tamatoe and basil pasta sauce on it. Put BBQ sauce on tofu. When baking beans, stir in some BBQ sauce. At least it is good with black beans. Those are the ones I eat. I made something delicious, for the first time the other day for lunch. I took some veggie ground seasoned with cajun spices and put it in a hot dog bun. Than put the tofu dog on top, put some cheese on it and than some BBQ sauce on it. DAMN good. veggie pizzas - Again, that tamatoe and basil pasta sauce, boboli crust, shredded cheese, onions, goat cheese, fresh basil. Goat cheese and onions are optional but highly recommended. miso soup is good for cold days and sometimes, black bean soup and a little bread is all you need for a filling dinner. There is a company, maybe morning star, that has VERY GOOD sloppy joes. You can buy the box for like 2 dollars and all you need is tamatoe paste and veggie oil and buns or bread and there you go! Those tend to be my key staples for dinner.
