1)roast a red pepper and two mexican chillie peppers . 2) caramelize onions 3) chop garlic . mix roasted peppers, onions , garlic , lemon zest(one full lemon)with fresh thyme , salt , pepper ,saffron olive oil and sugar . cut chicken at the tail of the breast going inwards with out puncturing to the other edge and make a pouch. stuff chicken with filling and garnish on top as well .. put chicken in oven . sauce : put red wine, salt and pepper , and taraggon and sugar in saucepan , light on fire when it start to boil, reduce till a syrup , add demi-glace ..( the trick to a good port sauce without expensive port is cheap wine n mad sugar with fireeeeeee) cut chicken breast and top with sauce and veg .. i like to make grilled asparagus wrapped in Prosciutto . or thin potatos chips roasted with thyme, garlic , leaks , onions , saffron . or both
