How many different types of oil do you currently have/use? I've got olive, corn, vegetable, canola, peanut and saffron. I pretty much stick to olive for most everything.

Do you have special needs for each one or do you adhere to a one oil fits all policy ?

I typically use olive oil (extra virgin) for most of my cooking but on hand i have safflower and vegetable also.

Certain oils are used for different styles of cooking such as peanut oil you would use for high degree cooking. Safflower is a medium/ high heat baking oil. The brand i use tells you the different uses on the bottle. I don't know the brand off hand but if interested i can find out.

I use olive oil for most of my cooking, but some things just don't "go" well with that olive taste. For baking & such, I use grapeseed oil.

I use canola oil or "vegetable oil" for baking sweets (which I try not to do often!). I use olive oil for most of my cooking. I am thinking of getting flaxseed oil to add to my diet (don't heat flax oil, it loses all "good" properties).
I haven't tried sunflower or grapeseed oil. Can anyone tell me the flavour qualities and uses of different oils (sunflower, safflower, grapeseed, etc. not the ones I mentioned)?
    thanks
