corn fritters are the easiest...domt even need potato..just add flour to a can of creamed corn and fry in butter or oil...they take longer to to cook and have a very well done look when finished but will remain soft and delicious even at 15 minutes a side on medium heat

that sounds TERRIBLE for you...think about how much butter and cream are already in mashed potatoes....that is a recipe for a future heart attack! there are many better potato pancake recipes our there, trust me eat as you wish though, i'm just sayin!

No eggs. Fuck that. I just put hella butter in my mashed taters before I reheat them, as well as lots of salt and pepper. I don't care if they're runny. I don't like eggs though.

what do you mean mashed potatoes don't keep? Do you leave them uncovered or something? I've never had a problem keeping mashed potatoes for up to a week.
