i love chicken, but i've eaten almost no other meat in a long time

    chicken is good. but its cheap, and thats why i get it. dont get me wrong, i love it, but it gets old when thats nearly the only meat i eat all summer. plus i can't justify getting anything other than whole chickens to roast because they're so much cheaper than getting the deboned parts and all that, and i'm not good at deboning chicken and such, so it's less versitile...so pretty much all i use it for is roasting. i love it, but i want a change. i want some beef, damn it!

    i'm no pro, i just am enthusiastic about it and love to learn to cook new things. but if you would like, here's one that is quite simple but very delicious

    i looked online at other recipes, and they are similar, but i'll share the one my grandma taught me for fried corn, the american south's cousin to creamed corn


    get yourself some ears of sweetcorn. personally i like this a lot and count on using two ears per person eating it. shuck the corn and remove as much of the silk as you can, and rinse the ears.

    using a sharp knife, cut the kernels off the cob, but do your best to get only the top portions of the kernels, leaving about half of the kernel still on the cob. set the removed portion aside for now.

    using the flat back side of the knife, run it down the cob as if you were trying to cut the rest of the kernel off. this will remove the juices and the mush from inside the kernels, leaving the shell of the kernel attached to the cob but liberating the innards. this mush is called corn milk. keep the corn milk and the cut kernels seperate, and heat a pan with some fresh butter in it. i'd use about a teaspoon per ear of corn. discard the now essentially useless corn cobs.

    as soon as the butter is sizzling toss in the cut off kernels and stir with a wooden spoon, allowing them to fry on their own for a minute. after this, add all that corn milk to the pan and let it simmer for a while, slightly softening the kernels and getting the butter flavor throughout. season it to taste with salt and fresh ground black pepper.

    as you can see it's really a very simple process, but this is some of the best sweetcorn you will ever taste, and even lower quality ears of corn you can get at the supermarkets here can be delicious when cooked this way. it's a great side dish, and always reminds me of dinner's at my grandma and grandpa's house :cheers2:

    (i recommend it with poultry or with pork chops!)

    In Belize a traditional meal is Chicken, beans and rice.

    Breakfast lunch and dinner. Fucking crazy.

    Thank god there are good cheap tasty fruit available.:)

    try making a burrito with a whole chicken.....


    i'm perfectly able to prepare chicken different ways. what i'm not good at is seperating the parts from the bones when it's raw.

    buying whole chickens costs about half as much as buying chicken breast, sometimes less. i'm pretty poor, and i'm not a butcher.

    its not a lack of ideas, its a lack of easy options.

    its not an effort thing, its a skill thing. i can cook just fine, but i am by no means a professional and even carving a cooked chicken, for me, is sloppy. deboning a raw chicken and seperating the parts is going to be tougher stil for me.

    but once it's cooked, yes. i make a lot of sandwiches for leftovers and such, and there is always some hard to get meat on the carcass and i boil it off and make homemade chicken soup

    i disagree in most cases. regardless, i couldn't finish a whole turkey by the time the meat starts getting funky. and it's far more expensive.
