granola-just like wavy gravy used to make!

    Granola-just like Wavy Gravy used to make!
    Completely veg and somewhat vegan


    Ingredients

    ½ cup canola oil

    ½ cup honey (or a vegan substitute)

    6 cups old-fashioned oats

    1/3 cup bran

    1/3 cup toasted wheat germ

    ½ teaspoon salt

    1 tablespoon cinnamon

    1 ½ cups unsweetened coconut

    ¼ cup sunflower seeds

    ¼ cup sesame seeds

    2 cups chopped walnuts

    1 1/3 cups raisins

    Directions

    1. preheat oven to 350 degrees
    2. Combine the oil and honey in a large stockpot and heat. Stir often, just until blended. Do not let the mixture boil! Stir in remaining ingredients, excluding raisins. Mix well to coat everything evenly with mixture.
    3. Bake the granola in three batches. Spread 1/3 of the mixture evenly on a large baking sheet (with sides). Bake 15-20 minutes. For the last 5-10 minutes, toss the granola occasionally with a spatula, allowing it to cook evenly. Watch the sides, the granola tends to burn there. The granola should be very brown but soft when done.
    4. Dump this batch in a bowl and stir in 1/3 of the raisins. Allow it to cool completely before putting it in a container, or it will soften.
    5. Repeat step 1-4 with the remaining batches of granola.
    6. You can put it in yogurt and cereals or eat it as is (my favorite way to eat it!)
