Favourite vegan foods

    Sounds kinda silly, but I have enough trouble finding things I like to eat just without meat sometimes. When we had passover, where you can't eat any form of wheat or grains except matzos (like a cracker), and I couldn't get any of that, I felt horrible..

    So I was just wondering what your favourite all vegan foods are, and how you manage to do it!

    I'm not vegan, but a lot of my meals just wind up that way. Some of my favorites:

    black beans and rice

    I'll usually start with canned beans. Sauteed garlic, onions and celery are all good additions. Sometimes I throw in some diced canned tomatoes while it's cooking. Other times, I'll add a bit of liquid smoke, or some brandy (may not be vegan... there are threads about this in the vegetarian forum). Substitute red beans for black, or spice it up with cumin, oregano... subtle changes keep it interesting.


    Garbanzo Bean Stew

    Start off by sauteeing some onions and garlic in olive oil. Add some canned diced tomatoes, a can of rinsed and drained garbanzo beans, some chopped capers and salt and pepper to taste. Let this stew for awhile. Just before serving, throw in a good handful of frozen chopped spinach.



    Scrambled tofu with mushrooms- marinate the tofu in soy sauce or braggs, sesame oil, and a bit of rice wine vinegar. Soften mushrooms in olive oil, then add the tofu and heat through.


    Miso soup- heat miso and water together to make a broth. Add tofu, mushrooms, and spinach. I like to season this with sesame oil, ginger and soy sauce.

    It's easy if you like to cook like I do. Most meat dishes can be made veg just by cutting out the meat and upping the amount of veggies or adding some tofu. Here's one of my fav veggie dishes

    Veggie Chili (freezes very well!)

    1 tablespoon olive oil
    1 pound fresh mushrooms sliced
    4 cloves garlic minced
    1 red pepper chopped
    1 small onion chopped
    2 stalks celery, chopped
    1 (29 ounce) can tomato sauce
    1 (6 ounce) can tomato paste
    3 (15 ounce) cans kidney beans, drained and rinsed
    1 (11 ounce) can crisp corn kernals
    1 teaspoon chili powder
    1 teaspoon red pepper flakes (or to taste)
    1/2 teaspoon ground black pepper (or to taste)

    Directions:
    Heat oil in skillet. Saute mushrooms, garlic, onion, red pepper and celery until tender. Transfer to stock pot or slow cooker. Stir in tomato sauce, tomato paste, beans and corn. Add spices and cook for atleast an hour to blend flavours. (the longer you simmer the more flavor will be absorbed)

    Lentils! POUNDS AND POUNDS OF LENTILS!...But seriously, lentil soup, and other lentil dishes are a great source of the nutrients you need.

    my favorite vegan foods? there are so many to choose from! i love hummus, fresh fruits and vegetables, pasta, and flax seed waffles. you can find so many vegan foods its amazing. my only advice on making being a vegan easier is to remember why you chose this lifestyle. whether it be for health or ethical reasons, you made a great decision to abstain from animals products. good luck!

    Jewish people, like everyone else, all have millions of years of vegan dishes in their blood. Matzos are a recent development that lack crazy mind altering enzymes like unprocessed things, fresh herbs, psylocibin....

    The ocean of experience in you is the best road to discovering how to guide your diet, not the Pentateuch.

    Make a list out of a food encyclopedia of every interesting and colorful morsel that you think your ancestors stumbled across with a smile in the woods. Buy it, eat it, and check off your favorites. Then make a thesaurus of them by synonymizing the ones that are compatible. Make these into dishes and eat them happily.

    Health is our ultimate concern, just as much as faith.

    Or maybe im wrong...meh..

    I have so many favorite vegan foods, I can't begin to list them all but some include:

    Bean burritos with guac
    hummus and pita
    veggie sushi
    chickpea salad sandwhiches (w/vegenaise)
    ww pasta with tomatoe sauce and lots of nutritional yeast.
    Baked sweet potatoes
    any east indian food that's vegan
    falafel.

    i'm a fiend for anythign with couscous. i'll agree with the lentil guy, i had the most amazing lentil burritos last night.

    I am really starting to like raw foods.. lots of fresh veggie salads. love them.

    looove guacamole, and veggie curries. I looooooooooooooove collard greens (you'd be surprised how good those things are in curry.. weird, but i saw it on a recipe on the tag with my collards a while ago. ), and I like making chocolate tofu "ice cream."

    Tomato Vegetable Soup, it's awsome :). I shove all sorts of vegetables into the soup and while making tomato as its base.

    homemade soya burgers on whole wheat rolls...stacked with pickles soy cheese tomatoes onions and lettuce...mmmmmmmm

    Ingredients for Protose Broth Recipe

    • ½ pound protose or similar vegetable meat
    • 1 pint cold water
    • 1 cup broth from canned asparagus or water in which asparagus has been cooked
    • ½ bay leaf
    • ¼ teaspoon celery salt
    • ½ small onion, chopped
    Instructions

    1. Mash the protose.
    2. Put it into the water with the asparagus broth, bay leaf, and onion.
    3. Bring slowly to boiling, and simmer slowly for about two hours.
    4. Strain.
    5. There should be about one cup of broth.
    6. Season with salt and a bit of thyme, if desired.
    7. Reheat and serve.
