Cheese is what makes the world go 'round. What's your favorite kind? My personal favorite is Humboldt Fog made by Cypress Grove Chevre in Arcata, CA. It has a gooey layer around the firm center and a thin layer of ash in the middle. A little bit of this with some 12 year old aged balsamic is about as good as life gets Oh yeah, this kind doesn't count
It's a tie between a good well aged sharp cheddar (Bacon bits mixed in breaks this tie of course) and Bulgarian Feta, a bit sharper than greek with a hint of sweetness to it.
Chile con queso is my favorite, but that's rarely one type of cheese. So my favorite cheese is probably Monterey Jack.
