Cultured milk

    So, what's the deal with milk?? I made kefir the other day, which is has bacteria and stuff like that to culture the milk. it came from a box, so I heated the milk almost to boiling, let it cool to room temp. added this powder and let it sit out for a day...it started to curdle and was pretty tart, but really it tasted like tart yogurt...I've also heard of making this with curds you get from...a farm maybe?? where you can let it sit out, so, what's the deal with milk going bad, ??? because so far, I've drank about a quart of this stuff and nothing has happened, I think it's worked, but I hear all these things about how it's bad to let milk sit out for a long time..any help here??
