Not a vegan (but flex), but thought I would post it here since it fits the requirements. It's super easy and good for you: 8 cups water 3 vegetable bouillon cubes (or enough to make 3 cups broth) 2 cups dried split peas 2 carrots, peeled and chopped 2 potatoes, peeled and chopped 1-2 cloves fresh garlic, peeled and chopped 1 tsp thyme 1 tsp sage 1 tsp ground mustard 3 bay leaves Throw it all in the crock pot and cook on low for 6-8 hours. I cooked it for 8 myself as I like it reallllly creamy. Make sure to take out the bay leaves before serving. Needed to add a little salt to the first bowl I made, but that's just my preference. I just love split pea soup, no matter the season.
