Okay, I want to make latkes for passover but I don't know where to buy matzo meal so if anybody knows of substitute I could use that would be fantastic
2 cups peeled and shredded potatoes 1 tablespoon grated onion 3 eggs, beaten 2 tablespoons all-purpose flour 1 1/2 teaspoons salt 1/2 cup peanut oil Place the potatoes in a cheesecloth and wring, extracting as much moisture as possible. In a medium bowl stir the potatoes, onion, eggs, flour and salt together. In a large heavy-bottomed skillet over medium-high heat, heat the oil until hot. Place large spoonfuls of the potato mixture into the hot oil, pressing down on them to form 1/4 to 1/2 inch thick patties. Brown on one side, turn and brown on the other. Let drain on paper towels. Serve hot! obviously if you can't find peanut oil to fry them in.....you could use a different kind of oil.....
you're welcome.....and shalom to you.... make sure you get as much moisture out of the potatoes that you can.....the drier the potatoes, the more crispy the latkes......
You can get matzoh meal at any grocery store now. In the ethnic food isle there is always like... half of a shelf dedicated to kosher foods. If you can't find it, ask a clerk. Our recipe is more like this: 4 potatos 1/2 grated onion 1 egg 1 tbs salt 1/2 tsp baking soda... or is it baking powder (one of the two) 1/2 to 3/4 cup matzoh meal (however much to make the right consistancy) We don't dry the potatos too much, because we use the starch in place of more eggs. And naturally they are served with apple sauce.
I will definitely ask the clerk about that! I think most of the reason its not there is because the town I live in is, well, not-so-jewish and it really wouldn't be all that economical for them to buy all sorts of kosher foods if only one family were to buy them. Still...
