For me, it is probably one of the bigger game changers in separating my choice of (ovo-lacto) vegetarian life from vegan. I will not start by saying, "I was raised on that," because, well, I was also raised on red meat, salted vegetables, and sweets for dessert. There was a time when I went at it full force and always had a prepared mix of tofu scramble. For those uninitiated in the product (I used to buy it in a box, but later learned it could be made from scratch), it is 1/2 teaspoon salt 1 teaspoon nutritional yeast 1 teaspoon paprika 1/2 teaspoon celery seed 1/2 teaspoon Indian black salt (Kala Namak) 1/4 teaspoon pepper that are added to mashed tofu and fried in a pan or wok. It is generally accompanied with red pepper, garlic, onion, mushrooms, or whatever else you might care to add to your ersatz egg creation. The only 'problem' with my beloved tofu scramble is the form that it takes. It mocks the scrambled egg. It could be spooned into the groove of a celery stalk, spread over a bread, cracker, or wafer, or it could just be eaten with a utensil of your choosing straight from the plate. Fortunately for me, I have no allergies to foods from the vegetable kingdom. In fact, I have outgrown most of my childhood food allergies, but I nonetheless steer clear of them. Now, what about this egg? Believe it or not, eggs were also one of the cheapest sources of protein. I remember when they were under $1/dozen and could be used to accompany rice and beans. Maybe when I retire, I might consider toying with veganism, but for now I still make plans to have quality time with my incredible edible egg.
