I really need a better variety of dinner options (veg of course). I'm kind of a picky eater I guess, and I usually always have the same thing....either bean tacos or green beans and tomatoes in a vinagerette (or pizza). I'm sick of them all and I need to start eating healthier as well...so any suggestions would be great. Thanks
I know it sounds a bit mumsy but I find that having a range of vege cookbooks round the place helps me, I flick through them and if something that makes me go yum then I get the ingredients or I find something that has what I have in the cupboard...I have also had fun doing internet searches with what I have in the cupboard, there are a few sites you can type in what you have and have them generate the recipes...not always veg ones but you just sift through them to find what you want!! warning though...reading cookbooks can become addictive and there is a fantastic term I have heard used...gastroporn...yup....that is what it can become if you don't get off your ass and do it....stuff you look at but never do at home!!
That's a good idea stephanie. I'll definaltey get a few cookbooks. But I always don't have the time to cook...usually I am just fixing something up within 10 minutes or so. Any other suggestions?
are you vegetarian or vegan? a yum, quick vegetarian pasta - throw garlic, whole, small tomatoes, vego feta and kalamata olives in a roasting dish, cook them in a medium oven for about 20mins, until the tomatoes split and melt into the feta forming a kind of pasta sauce, then toss it through some penne with heaps of fresh basil. yum, quick, vegan pasta - roast a medly of vegies together with some fresh rosemary and a sprinkle of sea salt(tomatoes, eggplant, carrot, kumera work well) , leave out the feta and basil, and add some toasted pinenuts, toss it through penne.
oh geez, now this really going to make me sound like my mum!!! however I find that I have the same problem so when I cook I tend to cook a lot more than I need and freeze it so that when I am tired, have no time or just can't be bothered I am able to sift through what I have put away in the freezer and just heat it up. That way you know you are going to get something yummy and something good for you, it is so important to make sure you have a wide variety in your veggie diet as this helps you to get all the bits and pieces that you need to keep you kicking!! you have to test a bit what freezes ok and what doesn't but generally a lot of stuff is fine and I use the oven but you could use a microwave too if you wanted.... *wanders off to look in the freezer whilst crossing fingers that some spinach lasagne is still left*
You didn't mention if you had any rice or pasta. Those seem to be my weakness (I eat plenty of other things, too, no worries). Rice and pasta can be cooked in a million different ways! I'm strange and have a tendency to eat spaghetti with tomato soup. I don't know that there are many who share my love for that. I sometimes have difficulties finding a lot to eat, also. Does anyone know of any good websites with vegetarian recipes?
Google *vegsource*....they have a recipe section. I don't eat alot of pasta, because I can't stand tomato sauce (although I love raw tomatoes) and I guess I'm just not very into pasta. Although I do use a thin pasta in a pea/tomato/onion soup that tastes awesome.....problem is I have a few select things I am used to eating and Ive eaten so much of it that I am hardly able to stand it anymore!
