16 oz bag of dried black-eyed peas, soaked overnight (canned beans & peas have far too much salt, and who-knows-what). 6 cups water. 1 Vidalia onion, diced small and caramelized, 1 package of ham bits, diced, and sauteed, Maybe a scant tablespoon sea salt. Simmer covered for two hours, then boil uncovered for 30 minutes to boil down the 'pot liquor' into a black-eyed pea gravy. Ladle over white rice. Pretty much like what I had as a child, with less fat and salt. (I'm a 'cultural infidel'; I like sweet cornbread.)

Right, that 2021 over and forgotten and everyone has partied the night away, - Happy New Year everyone, so now we must start planning for the 'Burns Night supper' (25th January) who has their 'Haggis, neeps & Tatties' and their 'wee dram' ready ???
