Tonight's dinner was more chicken. This was a much easier meal though. This time I marinated it overnight in a brine plus a bit of hot sauce and oil, then I slathered a bit of Hoboken Eddie's Hot pepper sauce on them and baked them. I steamed some asparagus for a side. It ended up being a lot of meat, since I wanted to use it up before it went bad, so I left out adding a starchy side.
I made a stuffed turkey breast, with the help of Presidents Choice. Seriously, these are great, all white meat and you cook them from frozen. With that I did make mashed taters, asparagus and beets. Gravy from stock I had frozen. It was good.
This is one of my favorite "quick" meals which I made for dinner tonight. I basically just fry up some ground beef with peppers, onions and sharp cheddar cheese, with some spices (chili powder, garlic salt, etc.) thrown in for flavor. It's nothing fancy, but is quick and good.
Just a simple tartine for breakfast, tomato and gouda cheese on pumpernickel with basil. I love fresh basil. Yesterday I had the overnight oatmeal I made in the crockpot the night before. It was a cool morning and it warmed me right up. I bought a slew of veggies to ferment and roasts (beef, pork, and lamb) and pork side ribs to make in the next little while. And beef cubes for Hungarian goulash and a few chicken breasts (I'm salivating just thinking about it all!) I even found Vidalia onions to try the carmelized onions in the crockpot. Thank goodness there were sales on for all of it. I was sure they missed charging me for things, I expected the bill to be much higher. I was gritting my teeth waiting for the total to pop up. lol
I still need to try to make crockpot oatmeal. I hope you are planning to post about your upcoming masterpieces.
lol Come on down! I'm making ribs today. They're cooking as we speak. I'm making it in my tajine. It takes about 4 hours. I love using the tajine. The results are somewhere between roasting and slow cooking. The meat ends up with a bit of a crust, but it's tender and moist. It's also versatile because you can cook it on the stove, which I usually do, or you can stick it in the oven. It's going to be murder smelling this while it cooks! I've got a BBQ sauce on the ribs under the onions. I'll stick some Caribbean sweet potatoes in for the last hours or so. Of course! If for no other reason, to taunt you while you're at work. Bring plenty of carrots! lol, I have visions of you slobbering all over your paperwork.
I'm going to make you all suffer along with me. No smellerama here, but you can use your imaginations. Here are the ribs in progress. The onions are now partially caramelized. I added the potatoes, you can see the Caribbean sweet potatoes at the bottom with their purple skins, regular white potatoes near the top. I also added a couple of sprigs of thyme. There are garlic cloves in there as well. Oh man, the aroma wafting through the house is heavenly. I love making hearty meals in the fall and winter. The cooking bug always strikes me when the weather turns cold.
That looks delicious! I did find some of the Caribbean sweet potatoes and I am going to make them soon, so thanks for the tip Lucy. I got home from doing some errands and Mia had taken out a container of spaghetti sauce. So that is what we had for dinner. I made my own garlic bread with herbs and parm on top.
I just put the lid on the easiest crock pot applesauce, ever. I used the small crock pot, 8 peeled, cored, and chopped apples, 2 Tbls. water, and that's it. In 4 hours it should be ready for hand mashing with the potato masher or a pastry blender.
This is a beef mince and bacon pieces pie I made. These are caramel brownie cookies. This is a morning breakfast I made, maybe brunch with T Bone steak, a couple of lamb sausages and fresh veges.
I made a simple casserole because I don't have time to cook anymore. It was penne pasta, alfredo sauce, chicken and broccoli. It came out pretty good
