I usually make a paste of fresh garlic and sea or Himalayan salt, fresh rosemary and grind it together, with a bit of lemon juice and rind, and olive oil, and rub it on the meat and let it marinate for about ½ hour on the counter while the meat comes to room temperature. The steak I just pan seared on medium high heat. When I make a leg of lamb I roast it in the oven, no foil or lid. I cook both to medium rare.

Thanks guys, that's very nice of you to say. But it's a far cry from the way chefs fancy up their plates. I couldn't own a restaurant, I like to eat the food after it's prepared! I don't think that would go down very well. lol Tonight was pan seared Rainbow Trout with dill and sautéed white mushrooms with tarragon and butter, wild rice blend, with a salad of cucumber, cherry tomatoes, and radishes with fresh chives.
i bought some chicken fingers too busy to cook today i intended on steak but damn the prices seem so high lately for beef i think ill be cutting down drastically on my steak cooking///
today has been one of those days the house has been full of people all day, so it is one of those days i have avoided doing so. i don't know how well my cooking would be received by my housemates, so i have so far avoided inflicting it on them. i really love them more then they understand, as i do most people, though not what seem to be some of their perspectives on many things. this may just be do largely to age differences. at least that's my 'benefit of the doubt' to hope so. at any rate there is less that interests me in the rest of their lives or the rest of their house, then what i have to play with by myself in my own room. an apartment would cost more, and at the same time be even more likely to inflict on my what i'd rather not have to listen to, then my housemates do. this is not a claim on their part, but an experience on my own. i would love to live by myself in a shack i build myself, little by little over time, if only i lived in a land where i was allowed to do so, and without having to indenture myself for the land to build it on. that's a lot of long winded rambling, but it is why i haven't cooked anything today.
I think a lot of chefs fancy up the plate too much, like a tiny delicate sculpture you are afraid to put a fork to! I like a plate of food that looks like it wants to be eaten! ...a plate of food that wants to be eaten! :2thumbsup:
