I made chicken with lemon, thyme and parsley, honey glazed carrots and stewed squash and and zucchini
I made toast for my daughter and an english muffin for myself. Additionally, I microwaved a tv dinner for myself. I miss having the time to actually cook, not that I was ever any good at it.
Mmm... I think Mama needs to put together a recipe book. I guess I should have posted making the avocado taco dip in this thread, though it's not exactly "cooking". It's quick and easy to make and nutritious. Recipe, if anyone wants it... Avocado Taco Dip 1 avocado 1 cup bell pepper 2 plum tomatoes 1 Tbsp chives 2/3 cup shredded cheddar cheese 2/3 cup taco sauce (got a recipe for that too if anyone needs it, or you can use a premade jarred taco sauce) 2 Tbsp lime juice Dice up the avocado and veggies and toss together with the cheese. Stir in taco sauce and lime juice. Serve with tortilla chips. Makes approx. two servings (one for Gongshaman)

I actually am writing a cook book . One for each of my kids. They each will have pictures of us cooking together throughout their childhood years, then I'll give them the books when they're grown. You're recipe sounds fantastic! Zucchini noodles ftw! I love veggie noodles. I like to sub pasta with spaghetti squash as well.
well i made chilli mac. the chilli came in a can. the mac were these little rapid cooking noodles. the only thing i added was a capful of lemon concentrate, as i tend to put in almost everything. it wasn't a major day for creative cooking. but at least i assembled and cooked it on the stove. instead of just putting some nondescript frozen brick in the microwave.
