I've been buying the stuff at a little Middle Eastern deli in St. Pete for months, when it finally occurred to me to just make it myself at home. It's easy: place a coffee filter in a funnel; put plain yogurt in coffee filter; drop the whole apparatus into a glass so the whey can drain off; walk away for four hours. I've been eating the stuff like crazy... on toast with honey, in a veggie sandwich on flatbread with mushrooms, cukes and tomatoes.... by the spoonful straight out of the crock.... Wondering now what kind of cheesecake it would make. It's much more tart than cream cheese, but maybe this would be good with a cherry topping? Going to play around some more today.

Do you have some ideas for the whey? I just drank it the other day... it was good, but odd. Weird aftertaste. I know that it's good in baked goods, but I seem to hardly ever bake anymore. bellystar- yay, a convert! gertie- thanks! Now I've got to get back into making my own yogurt. Hmm, wonder whether I gave away my yogurt maker....
if you eat lentils/pulses, you can use the whey to soak them if you do any lacto-fermentation, you can use the whey for that add it to baking (as you said) put it into smoothies use it to feed sourdough ps, check out the book nourishing traditions, they use whey for a lot of things.
When I made my yogurt cheese (which ROCKS by the way - my Mom, my boyfriend & I all LOVE the stuff) I wasn't sure what to do with the whey either. So, rather than dump in down the drain I decided to drink it too and yes it was odd, but good...and I knew it had to be good for me!!!!! Thanks to nimh for the suggestions on uses for it, I think I'll look for that book Nourishing Traditions...sounds like a good one!!!
