Pacific Cod sounds good but I’d change the menu slightly replacing the asparagus spears with asparagus tips, and replace the sweet potatoes (which I hate) with mashed potatoes Hotwater

Nice! I've been gluten-free for a few months now and have found it easier than I had initially expected. This is by choice of course and I may go back at some point, but I'm OK with the diet right now. So, what's for dinner tonight? My homemade carnitas tacos! Pics to come!
i like to cook too. a typical day off work for me means wake up, cook breakfast, eat breakfast, cook lunch, eat lunch, cook dinner, eat dinner, prep for next day/make a dessert (if there's none left), eat dessert, fuck around for a couple hours and go to bed. it's a bit of a drag sometimes but i like to eat good food and that takes work. and i gotta have my sweets. i'll put sleep on hold if i don't have a slice of pie, bowl of ice cream (homemade ofcourse), semifreddo, pudding, pastry, whatever. buying something pre made is out of the question. i can't understand going gluten free unless you are celiac. it's a huge limit to your diet, but i suppose it forces you to be more innovative. i don't understand the health benefits considering that bread has been THE staple food for thousands of years. i eat more than anyone i know but i'm barely 130 pounds soaking wet and with a full stomach (and it's always full)
The wheat we consume today is far different from the wheat of just 60 years ago. It has been genetically modified (41 chromosomes vs. 14 of the original Einkorn wheat) to produce more gluten. Two slices of white bread will trigger a greater insulin spike than a Snickers bar. I'm doing this more as an experiment than anything after reading "Wheat Belly". I train like a madman and I can say definitively that since I've gone gluten-free, I am getting leaner day by day while maintaining good lean body mass.
what the hell is "white bread"? find a good flour source and make your own. problem solved. i was grinding my own flour back when i had all my gear with me. now i order my flour online. i do it for the taste though. you can't turn garbage into gold. if your flour is crap your bread's gonna suck. and you don't have to eat a whole loaf in one sitting. just enough to sop up the juices or to dip in your wine
Personally, I'm all in favour of peopel going gluten-free out of choice. Some of us don't have a choice (and no, I'm not caeliac ... but I AM intolerant) and the laws of supply and demand ensure that we have to pay through the nose for just about everything pleasurable we ever eat. The more people go gluten-free, the more the demand will stimulate fresh supply and prices will come down.
