running out of things to eat?

    I've been a vegetarian for 6 months and my diet usually consists of cereal for breakfast, peanut butter sandwiches and carrots with humous for lunch (either that or the shit the school tries to feed me), and rice/pasta/potatoes with vegetables/salad for dinner. I snack on cookies and fruit during the day. My family are in dispair with the food i eat (as is my stomach) so i was wondering if you guys could give me some alternatives and other meal ideas that are quick and easy to make? I'm in need of some serious variation :)

    go ethnic

    rice w/ tofu-veg stir fry

    flat bread w/ curried lentils/peas and veg

    bulgur wheat with chickpeas and salad veg, lemon and mint

    corn mush with beans, yams, greens & tomatoes with african seasonings [use the google]

    some of these can be made in bulk and eaten for days

    there's a whole world of cheap, fast cooking out there

    And their are many good books at your local bookstore that would help you.

    ^^^ i still recommend the vegetarian epicure books, after all these years

    lots of recipes online too

    in general i roll my own, but that's experience talking . . .
