Most of my family is from Italy, but my mom's side lived in Waco before they moved to Illinois when she was in her mid-teens. So I thought I'd share this family recipe with everyone. Ingredients: Cake: 1/2 cup of shortening 2 cups of sugar 2 egg whites 1 tsp. of baking soda 1 tsp. of salt 2 cups of flour 1 3/4 cups of buttermilk 1 tsp. vanilla Icing: 1 stick of margarine 1/2 cup of buttermilk 1 box of powdered sugar Tip: I've found that 2 cups of pure cane sugar works the best with this recipe. Directions: 1. Beat shortening, sugar, and egg whites in a bowl until fluffy. 2. Then add baking soda, salt, flour, 1 3/4 cup of buttermilk, and vanilla in with it and mix. 3. Pour mixture into a sheet pan and bake at 350 degrees for 20-25 minutes. 4. Once done, pull out of the oven and set aside. 5. For your icing, mix together 1 stick of warmed margarine, 1/2 cup of buttermilk, and 1 box of powdered sugar. 6. While your cake is still warm, ice it evenly and gently so you do not tear the top of the cake (which shouldn't be a problem if you followed the ingredients above) 7. Cut yourself a slice and enjoy!!! If you have any questions, feel free to ask. This recipe is condensed on a small index card, so I had to put a lot of this in my own words. I apologize everyone, I almost forgot to post a picture of what it should look like. I did not make this, but it's very similar to what mine looks like except for the lemon slice, which might add a nice touch. The icing should be very creamy, and the cake should be somewhat moist. if its not, thats totally okay. The icing will release some moisture into it. Also, if you want to get another box of powdered sugar and sprinkle over the top, that is fine as well. Godetevi i miei amici! and God Bless!
