This recipe comes out great every time! Combine 1 c sugar, 1 c roasted peanuts, 1/2 c corn syrup, and a dash of salt in to large bowl. Microwave on high for 5 minutes. Stir. Microwave on high 3 minutes. Stir in 1 tablespoon butter or margarine and 1 teaspoon vanilla extract. Microwave on high 1 minute. Stir in 1 teaspoon baking soda. Turn entire mixture onto a sheet of heavy-duty aluminum foil. Spread, but not too thin...about a peanut width thick. Allow to cool, remove from foil, and break into bite sized pieces. When you turn the mixture out, it will be very hot. Be careful. Scrape the bowl as clean as possible. Cleanup the bowl and spoons with hot water in sufficient quantity to dissolve the sugars. Caution - do not double or triple the recipe...the microwave times won't work. If you want a double batch, make two batches. I learned this tip from experience. This recipe makes a terrific addition to holiday sweets, and also makes a good gift to people with a sweet tooth.

HOLY SHIT, please duplicate this thread and sticky it in the stoners lounge! I did it. I did it all wrong, and didn't QUITE have enough corn syrup, and had no butter, but didn't check before I started. I used home roasted peanuts, (which had a REAL peanut brittle receipe on the back of the bag of uncooked peanuts... but fuck THAT ) and substituted one quarter cup of the sugar with raw brown dehydraged cane juice sugar, and then had to use olive oil when the butter came. Also, you seem to have a weak microwave, I put it in for 5 mins, then oil, then 3, but had to take it out after two more and finish right there, it was burning on one side. Cleanup's a BITCH, but this is epic shit. Maybe if I doubled the recepie your times would work better for me. *edit* I also had no vanilla... but I made up for it with raw cane sugar epicness. *edit2* I think before road trips, shows, etc, I'm going to make up like ten sheets of this shit. If you put the foil in a rectangular pyrex dish, you can get a pretty shaped product, and could carry sheets stacked. Shit could be worth it's weight in gold, in trade

Easy, fast and good . You can never have to much peanut brittle or beef jerky ! You're right RooRshack , trade / gift potential is huge . Someone the other day posted a recipe for peanut butter bars with chocolate , sounded pretty good too .
Shit, I used baking soda.... Seemed to work okay. This sounds like a little batch, because it's microwavable.... it makes a pretty decent amount though, I broke into large strips, and had a little too much to fill a ball mason jar.
The recipe calls for baking soda, not powder! c does stand for cup in recipes. As for doubling the recipe, I've tried it, and the time gets messed up. If you want more, just make two batches; it doesn't take that long.
