I have until wednesday afternoon to eat all of the food in my fridge. I've got three bell peppers, one tiny eggplant, eggs, tofu, salmon, spinach, an artichoke, lemons, snap peas, and some carrots. I've also got different kinds of noodles and rice. Please post interesting recipes because I'm so tired of everything I know, and this is a lot of food to eat, or just post your favorite food blogs for me to look through.
Nutritionally speaking your best bet would be to eat all the veggies raw, or steamed. If I were you for one really good meal I'd grill the salmon with fresh lemon juice over it. Steam some spinach and eat the peppers and peas raw.

get rid of the tofu first. feed it to the dumpster monkey salmon, rice, spinach salad eggplant, noodles eggs for breakfast
bake the salmon, peas and carrots and eggplant with lemon juice and other seasoning. Soak the eggplant in a brine first make some kind of spinach and egg salad. make a dressing from the lemon juice. sautee asparagus, peppers, tofu, add them to the noodles and rice, put a fried egg on top, and mix it all together.
Spring break happens on Wednesday, so I won't be back to my apartment for two weeks, and I don't want to come back to rotten food but I also don't want to waste the money I spent on the food. I've taken care of the salmon, lemon, spinach, and most of the carrots. I think the peppers are next. Thanks so much for all the help
