i just dumpster dived aboot 600 pounds of organic rice. i;ve been giving it away. but some of the bags have bugs in them so people don't want them. so i was thinking of making sake... anybody know how? or any other use more massive amounts of rice.
I've seen recipes for sake, but I don't remember well enough to tell you. I'm sure you can searcht the web. Where'd you get that much rice. It makes me sick whenever I see the amount of waste at even a local grocery store. People are starving and they throw good food away all the time. Anyway, cheers to you for saving the rice, and even more props if you can turn it into alcohol. Peace
what kind of bugs are in there? often times little gnats and stuff will get in, and all you have to do it wash it really good, boil it, and it's fine old rice is GREAT to make fried rice! (one of my absolute favorite foods, i might add) white rice should be washed anyway, before you cook it. just put in a bowl, run a bunch of water over it and get your hands in it, do this several times if you want... oh and the "temperature hazard zone" of food, is between 40 and 140 F (most bacteria doesn't survive if the food is kept below or above that)
I looked at a couple of recipes on the internet, and doesn't look too hard. Check them out. You have to make the fungus culture first. Maybe you can make rice beer. That's basically what Budweiser is. http://www.tibbs-vision.com/sake/moto1.html http://www.glaurung.demon.co.uk/wine/tradsake.htm
the bugs are these little wormy types that turn into flys. i found all the rice at a smallish healthfood store, you can find lots of stuff at big grocery stores except they use these hardcore compacters that you can't get into. but you can open them, which makes a huge mess and the cops would likely be called... yeah the fungus seems like the hangup on this project, prolly expensive. but rice beer.... i'll look into that. cheers
