here's a recipe for a vegan chili that i just finished making. i've had a running list of ingredients (in place of an actual recipe) for a few years now, and i'm sure this is the best version that i've done. almost all of the ingredients used are local and/or organic. enjoy! Vegan Chili Recipe Whole Ingredients - 3-4 onions, depending on size (mix yellow and red) - 4-6 bell peppers, depending on size (mixed colors; green, red, yellow) - 2 large jalapeños (leave some seeds in) - 4-5 serrano peppers (leave some seeds in) - 3-4 shallots - 3-5 cloves of fresh garlic - 2 bulbs roasted garlic - 2 reg. cans of black beans - 1 reg. can of kidney beans (45oz of beans total) - 1 small can diced green chiles - 1 reg. can crushed tomatoes - 1 28oz (large) can whole roma tomatoes - 2 large, fresh tomatoes - 4 tablespoons tomato paste - 4 stalks celery - 2 small yellow squashes, diced in small pieces - raw corn from the cobb (fresh or kept frozen – about the size of a sour cream container or more) - dry quinoa, about a ¼ cup - 1 empire apple, half put in mid-way through, half put in towards the end - 3 Field Roast (brand) Vegan Mexican Chipotle “sausages,” cut up in large and small pieces Wet ingredients - ¼ - ½ cup olive oil - 2 tablespoons balsamic vinegar - 2 tablespoons chili-infused white vinegar - 1 bottle beer (Ale) - maple syrup to taste - fresh lime juice (half a lime) - mustard to taste (sparingly): Horseradish/Beer mustard, stone-ground mustard - 3-4 small pieces chocolate: 55% cacao - water for desired consistency Dry Ingredients (spices) - 3-4 tablespoons homemade chili powder (see below) - 1 tablespoon cumin (or to taste) - 1 tablespoon oregano - dry red pepper flakes - salt & black pepper - powdered cinnamon (very potent – use small amount) - 1 bay leaf (remove after cooking) Instructions: · Roast bulbs of garlic in the oven, topped with olive oil · Carmelize all onions in a separate frying pan · Add oil to pot, then fresh garlic and shallots · Add onions and yellow squash · Add roasted garlic, bell peppers, hot peppers/chiles · Pour in all vinegar · Add finely chopped celery · Add beans (rinsed) and all tomato-related ingredients · Put in pieces of chocolate · Add dry quinoa · Pour in 1 bottle of beer · Cut up 3 Field Roast (brand) Mexican Chipotle “sausages” into small and large pieces · Add corn · Add first half of the apple · Add all dry spices · Add mustard sparingly · Add maple syrup to taste · Add fresh lime juice · Put in the rest of the apple Homemade Chili Powder (for about 2 batches of chili - easily doubles to make more) - 3 dried ancho chiles - 3 dried morita (chipotle) chiles (or cascabel chiles) - 3 dried arbol chiles - 2 tablespoons garlic powder - 2 tablespoons paprika - 1 tablespoon dried oregano Cut up chiles (removing stems and seeds) with scissors and put into frying pan Dry roast on med heat with whole cumin seed (or alone), stirring all the time Put chiles in blender with dry spices and blend until a powder Leave lid on for a couple of minutes to let the dust settle Garnishes (some of these options aren't vegan, so omit them if you wish. i'm not vegan myself so these are things i usually use) - Cranberry/Chipotle Cheddar cheese - Sour cream - Avocado - Whiskey (very little) - Beer - Fresh lime juice - Potato rolls/Cornbread/Tortilla chips - Cilantro
i would like to try the whiskey garnish my mom made vegan chili before. she put bits of cactus in it. its was...interesting.
