Whole wheat pasta with veggies and 'Gardein chicken breast'(vegan). In a large skillet add a little water and a little olive oil. On medium heat. Add Gardein chicken chunks. Add diced tomatos, zucchini, yellow squash, and finally mushrooms. Let it all cook. Start whole wheat pasta in a separate pot, cook pasta, strain pasta. Mix everything together, add a little olive oil, and serve.
Was really craving spinach and artichoke dip, but I didnt have any chips whatsoever (not sure if thats supposed to be one word) so I added some eggplant into the mix and through it all on some wheat bread. The spinach and artichokes were tasty but the eggplant was a bit off.
I'm going to be boring and say I enjoyed my simple 'trail' mix of raw almonds, walnuts and dried cranberries haha
I had some awesome Italian thin cheese pizza. So good but now I feel slugish lol. I think I'll make stuffed peppers and maybe add some polenta in it for dinner. Yummy!
carrots and shiitake simmered in soy sauce and mirin black beans and kombu [kelp] simmered in soy sauce rice, green tea [feeling very calm now]
I'm totally new to this, I tried a bruschetta tomato basil parmesean veggie burger and vegan nuggets made from stone ground whole wheat. Was quite delicious. [side note- I'm hoping that as I distance myself from different types of meat at a time, and eliminate dairy I will be able to become vegan.]
