Swim needs some help. He received two separate orders of Atlantis truffles, one of 60g and the other 50g from two different sources. The 60g came in 3 plastic tubs which had a cooling aid in the box so they were kept cold. It then says on the tubs to keep them refridgerated. However, the 50g came in five separate vacuum packs and they arrived very warm, because there was nothing to keep them cool. This may be a silly question but because they are vacuum packed does that mean they don't need refrigerating? Also the truffles in the tubs are of various sizes but are all pretty much round in shape and they are dark brown with speccles of white. The ones in the vacuum packs look a lot flatter, almost like grilled aubergines and they are brown around the edges with white covering much of the surface. Can anyone advise swim on storage of the vacuum packs and whether it makes any difference to the affects?
If you opened the vacuum pack already, then put them in the fridge for 2 weeks storage. Otherwise you can store the truffles anywhere in a dark place as you would do with mushrooms. Also for long term storage use the freezer. Edit: Also make sure the truffles are 100% dry before storing in the freezer. You said the bags were warm when you got them, their could of been some condensation in them.
