for those with gluten sensitivity/celiac

    if you can have dairy

    a note- something I do for 'wraps', burritos or just something that tastes bready...

    fried cheese.

    no breading, just take a very hot cast iron skillet, dump a handful or two of shredded cheese onto it, and cook until you can flip it without tearing it apart, brown the other side a little, pat off excess grease, and then while warm, wrap about your filling. once it cools, it'll have (depending on the cooking time and temperature) a pleasant crunch or a breadlike chewyness, and if you use something like queso quesadilla cheese, it tastes like a grilled cheese.

    I find the best for this is mozerella, queso, or mexican frying cheese.

    Thank you!!! My little boy can't have wheat and I feel like I'm having to re-lean how to cook. He does dig cheese so this is a must try! :)
